Maple & Caramel Brownie Bars
Wow have I been busy! I’ve been trying to find some time to share what’s been going on around here, and before I knew it….IT’S OCTOBER!! How crazy is that?
We spent our last weekend in September making a quick trip to Boston. It was the bye week, which means we must take advantage of a free weekend of no football! Since this was the only time this weekend would ever fall on the same day as our niece’s birthday party, we thought we would surprise her! Minus a few issues at the airport (every flight out of Chicago was canceled that morning) we were able to pull off a complete surprise for a very happy soon to be six year old! It was also great to spend a day with J’s sister and her family. We flew back the next morning, took a nap, and got ready to start the week with our Sunday night activities.

With the leaves changing colors, pumpkin spice everything, and fall now in full swing, I felt inspired to make a fall treat with not your typical fall flavor. I was getting groceries at Aldi (where I found everything to make these bars) and came across these delicious maple leaf cookies. These would be perfect for a fall theme treat on their own, but I just wanted the maple flavor and the crunch of the cookie mixed in with the chocolately goodness of a brownie.

was surprised to hear the football guys really liked these. Mostly because I’m nervous to try any new recipe on them, especially ones with different flavors. But J reassured me that if there is sugar in them, they will most likely eat it all up. And they did! Maple & Caramel Brownie Bars
2. Break and crumble cookies on top of brownie dough. Break them into small enough pieces to cover the whole pan. Feel free to add a few more cookies if you want more crunch. Or snack on one while baking. Sprinkle the ½ cup of chocolate chips over the cookie chunks. If you want, you can add a small drizzle of maple syrup for extra flavor.
3. Combine caramel (warm in microwave if needed) with the sweetened condensed milk. Drizzle mixture evenly over everything in the pan. Bake at 350° for 35 minutes. Let bars cool completely before cutting. Otherwise you will have a gooey mess. Store in a sealed container. These will be very sticky! Use wax paper if needed to keep cut bars separate.

- 1 box brownie mix (9×13 size)
- 1 stick butter, softened
- 1 egg
- 1 tsp vanilla
- half box of Maple Leaf Cream Cookies
- ½ cup chocolate chips
- Maple syrup (optional)
- ¼ cup Caramel (I used the caramel dip found in the produce section)
- 1 cup sweetened condensed milk
